Augusta Eats: Pineapple Ink Tavern brings vibrant flavor of Cuban cuisine to downtown

Many people cling to the “wouldn’t it be nice” pipe dream of owning a restaurant, but never follow through. 

Augusta businessman Allan Soto had the same dream. But as the founder and CEO of private-equity firm Vinea Capital, he also had the means to bring his dream to life. 

The result is Pineapple Ink Tavern, at the corner of 10th and Broad streets in downtown Augusta. What started as a gathering place offering “elevated bar food” survived the coronavirus pandemic as an oasis for Cuban cuisine.

Downtown Augusta restaurant reopens to share Cuban heritage

Leafy green plants painted on the walls, vibrant art and the front fender of a classic Chevrolet nailed to the wall, the inside of the reopened Pineapple Ink Tavern showcases its newly styled Cuban flare.

Located at 1002 Broad Street in the heart of downtown Augusta, the food and drink spot recently reopened to the public after two years of business. Originally opening one week prior to COVID-19 lockdowns in March 2020, the business quickly had to adapt.

“It was a very hard time for F and B in general, but we weathered through,” Owner Allan Soto said. “We had a lot of positive reception from the community.”

'It's the flavors of my childhood': Pineapple Ink Tavern re-opens as Cuban restaurant

As he stood in the packed dining room of his "new" restaurant, Allan Soto fought back tears as he described his beloved grandfather, Anibal, who is also namesake of one of Pineapple Ink's new cocktails: the Anibal'd Fashioned, an atypical old fashioned.

"He'd probably get mad if he saw this drink, like 'You're ruining a good scotch!' " he said with a laugh. "'Fruit doesn't belong in a drink, it belongs in a salad or something.'"

The audience at Pineapple Ink Tavern's soft-opening June 29 was a who's-who of Augusta restaurateurs, foodies and diners who, in Facebook and Instagram posts, had been awaiting the restaurant's reopening. But this wasn't the same Pineapple Ink of 2021. Soto had converted to it a Cuban restaurant, which is already getting positive reviews…

Pineapple Ink Tavern returns to the downtown Augusta restaurant scene

AUGUSTA, Ga. (WFXG) - Pineapple Ink Tavern has reopened after closing its doors during the pandemic. The restaurant has been closed for renovations since January, after being granted by the Downtown Development Authority to remodel their nearly 100 year old building.

Located 1002 Broad Street, the tavern is virtually the same, but with a new look and revamped menu…
